From the Far East – Rice Noodles Singapore Style

Ingredients
½ cup chopped green onions

4 cups sliced Napa cabbage

5 cups slice shiitake mushrooms

1 cup sliced green bell pepper

1 cup sliced red bell pepper

½ cup chopped onion

4 cups rice noodles

¾ cup vegetable broth

1 tablespoon brown sugar

2 tablespoons peanut oil

3 tablespoons soy sauce

ok until blazing hot, add oil and coat the wok. Add in bell peppers, mushrooms and onion. When softened add garlic, curry powder, and cabbage. Cook for a further 2 minutes. Add in the broth mix and toss around the veggies. Add your noodles and stir fry until noodles are browned. Add in green onions and serve.

From Mexico Spinach, mushroom & avocado, quesadillas

2 whole avocados

3 cups shredded cheese

5 ounces chopped baby spinach

1 chopped red onion

1 cup sliced baby Bella mushrooms

juice of half a lime

1 tablespoon olive oil

4 whole wheat tortillas

red salsa mix

 

Method;

Heat oil on a large skillet. Add onions and a pinch of salt. after 1 minute add mushrooms and cook for five minutes until golden brown. Add half the spinach, let it simmer and then add the balance. Cook for 3 minutes until spinach is wilted. Season with pepper and lime juice and remove from the heat.

Add cheese to tortillas, divide the mixture evenly between the tortillas, top with avocado slices and add extra cheese on top to finish. Hat a skillet and cook each quesadilla for two minutes until cheese has melted and tortilla is golden brown. Remove from heat and serve.
